Fall Recipes to Enjoy In Your Screened Porch
As the weather gets colder, it’s important to stay warm and well-fed as you enjoy the outdoors. Fortunately, we have a few fall recipes up our sleeves that will keep you and your family warm on even the chilliest November nights! Tortellini Soup
~30 minutes to make
Ingredients:
1 TBSP olive oil
1 medium yellow onion
4 carrots
4 cloves garlic
2-3 cups vegetable stock or broth
28 oz canned crushed fire roasted tomatoes
1/4 tsp dried thyme
1/4 tsp dried basil
1/8 tsp dried oregano
salt and pepper, to taste (~1/4 tsp of each)
9-10 oz refrigerated cheese tortellini
1-2 oz fresh baby spinach (1-2 cups chopped)
Chicken & Dumplings
~45 minutes to make
Ingredients:
1/4 cup butter
1 yellow onion, diced
1/4 cup all-purpose flour
10.5 oz condensed chicken broth
4 cups heavy cream
8.5 oz canned peas and diced carrots
2 cups chicken, cooked, shredded
1 tsp salt
1 tsp pepper
1 tsp onion powder
1/2 tsp ground sage
12 oz Pillsbury refrigerated biscuits
Chicken Pot Pie Casserole
~1 hour to make
Ingredients:
For the Filling
3 tablespoons extra-virgin olive oil
4 large cloves garlic, minced
4 cups shredded, matchstick, or diced carrots
4 cups diced cooked chicken, OR turkey
⅔ cup all-purpose flour
4 cups low-sodium chicken broth
1 cup half-and-half, plus additional for brushing tops of biscuits
¼ cup white wine, optional
1 teaspoon dried thyme
1 teaspoon garlic powder
½ teaspoon onion powder
1 teaspoon salt, plus additional to taste
Freshly ground black pepper, to taste
2 large potatoes, cooked, peeled, & cubed (about 4 cups)
2 cups frozen green peas
For the Biscuits
3 cups all-purpose flour
1 tablespoon baking powder
1 ½ teaspoons salt
10 tablespoons butter, diced and chilled
1 ¼ cups buttermilk
