Savor the Season: Scrumptious Outdoor Recipes

With summer in full effect, there is no better time to get outside and enjoy a meal in the fresh air. Experimenting with new foods and creating unique-tasting dishes is key to having a perfect summer. It can be difficult, however, to find recipes that are both delicious and easy to put together. Garlic Butter Steak Bites

Shrimp Pasta Salad 

  • 1 lb. medium shrimp, peeled, deveined, and tails removed 

  • 2 tbsp. salted butter, melted

  • 1/2 tsp. kosher salt, plus more for the pasta water 

  • 1 (1-lb.) box elbow pasta 

  • 1 c. mayonnaise 

  • 1/2 c. sour cream or Greek yogurt 

  • 1/4 c. chopped fresh chives 

  • 1 tbsp. lemon zest plus 2 tbsp. fresh lemon juice (from 1 to 2 lemons) 

  • 1/2 tsp. ground black pepper 

  • 3 celery stalks, chopped 

  • 1 red bell pepper, chopped

  • 12 ounces (3/4 box) whole-wheat fettuccine  

  • 2/3 cup chopped toasted walnuts 

  • 2 tablespoons reserved for garnish 1/4 cup olive oil 5 cloves garlic, minced 

  • 1/2 cup low-sodium chicken stock 

  • 1/2 cup chopped parsley leaves, plus more for garnish 

  • 1/2 teaspoon salt 

  • 1/2 teaspoon fresh ground black pepper 

  • 1-ounce grated Parmesan (about 3/4 cup) 

  • 2 cups arugula leaves, gently packed
