5 Awesome Recipes to Get You Fall-Ready

We’re so close to the crisp, breezy air of fall drifting into our screened porches, bringing with amazing scents. However, we don’t like to have to wait for fantastic scents, and we imagine you don’t either. To kick off the season right, before it’s officially here, we’ve compiled five phenomenal recipes that will bring the smell of fall to you before the outdoors does.

Black Bean & Avocado Wraps

Ingredients:

  • 4 large whole wheat burrito tortillas plus 4 small tortillas (0r one cut into four equal quarters)

  • 15 ounces black beans rinsed and drained

  • 1 cup Nacho Cheese Sauce

  • 2 jalapeños

  • 1 cup cooked brown rice

  • 2 Avocados cut into bite sized pieces

  • 1 cup grape tomatoes diced

  • 1 yellow onion diced

Balsamic Chicken & Mushrooms

Ingredients:

  • 4 Tbsp balsamic vinegar

  • 1.5 Tbsp soy sauce

  • 1 Tbsp brown sugar

  • 2 cloves garlic, minced

  • 1/4 tsp dried thyme

  • 4 boneless, skinless chicken thighs

  • 1 pinch salt and pepper

  • 1 Tbsp olive oil

  • 8 oz. mushrooms

  • 2 Tbsp butter

Beef Lo Mein

Ingredients:

  • 8 oz lo mein noodles, or spaghetti

  • 8 oz flank steak, thinly sliced against the grain

  • 3 tbsp soy sauce, low sodium

  • 1 tbsp cornstarch

  • 1 tbsp vegetable oil

  • 1 tbsp garlic, minced

  • 1 medium carrot, matchsticks

  • 3 cups broccoli, cut into florets

  • 2 tbsp hoisin sauce

  • 1/4 cup brown sugar

  • 1/2 tsp ground ginger

  • 1 tsp Asian sesame oil

Potatoes Romanoff

Ingredients:

  • 1 teaspoon butter, or as needed

  • 3 large russet potatoes, scrubbed

  • ¼ cup minced shallots

  • 3 teaspoons kosher salt

  • ½ teaspoon freshly ground white pepper

  • 1 pinch cayenne pepper, or to taste

  • 2 ½ cups grated sharp white Cheddar cheese

  • 1 ¾ cups sour cream

Spaghetti & Meatballs

Ingredients:

  • 3 slices white bread, (crusts removed), diced or torn to pieces

  • 2/3 cup cold water

  • 1 lb lean ground beef

  • 1 lb Sweet Ground Italian sausage, casings removed

  • 1/4 cup grated parmesan cheese, plus more to serve

  • 8 cloves garlic, minced

  • 1 tsp sea salt

  • 1/2 tsp black pepper

  • 1 large egg

  • 3/4 cup all-purpose flour, to dredge meatballs

  • 3 Tbsp Light olive oil to saute, or use vegetable oil

  • 1 medium yellow onion, (1 cup chopped)

  • 56 oz crushed tomatoes, (from 2 - 28 oz cans)

  • 2 bay leaves, optional

  • 2 Tbsp basil, finely minced*

  • 1 lb spaghetti
